Macadamia Brittle with Fleur De Sel

Ingredients

  • 1 cup unsalted macadamia nuts, toasted, chopped, cooled
  • 1 tablespoon chilled butter, diced
  • 1 teaspoon baking soda
  • 1/2 teaspoon fleur de sel or other coarse sea salt
  • 1 cup sugar
  • 1/2 cup water
  • 2 tablespoons light corn syrup

Instructions

  1. Place large sheet of parchment on a baking sheet. Spray with non-stick spray.
  2. Combine nuts, butter, baking soda and fleur de sel in a small bowl.
  3. Stir sugar, water, and corn syrup in medium saucepan over medium heat until sugar dissolves.
  4. Boil without stirring until syrup turns deep amber color, swirling pan occasionally, about 10 minutes.
  5. Remove caramel from heat.
  6. Immediately stir in nut mixture (caramel will bubble up). Pour caramel on to prepared pan, spreading thinly.
  7. Cool brittle complete, then break into pieces.
