Mini Pumpkin Muffins

Based on this recipe from Nestle.
Makes about 72 mini muffins.
Notes
A food processor makes crushing cookies and finely chopping nuts a breeze.
Ingredients
- 3 cups all-purpose flour
- 2 TBL pumpkin pie spice
- 2 tsp baking soda
- 1 1/4 tsp salt
- 1 1/2 cup sugar
- 1/2 cup dark brown sugar
- 1 can (15 oz) pumpkin
- 3 eggs
- 1/2 cup vegetable oil
- 4 TBL (1/2 stick) butter, melted
- 1/2 cup milk
- 1 cup roasted, chopped pecans
Instructions
- Preheat oven to 375°. Line a mini-muffin tin with cups.
- Combine the flour, spice, baking soda and salt into a small bowl.
- Combine the sugars, pumpkin, eggs, vegetable oil, butter and milk in a large bowl. Mix with a whisk until well combined.
- Add the flour mixture and stir until just moistened.
- Fold in the pecans.
- Fill muffin tins 3/4 full.
- Bake 12-14 minutes, or until a wooden toothpick inserted in the center of a muffin comes out clean.
- Cool on a wire rack for 10 minutes.
- Store muffins in an airtight container.
