Based on this recipe from Nestle.

Makes about 72 mini muffins.

Notes

A food processor makes crushing cookies and finely chopping nuts a breeze.

Ingredients

  • 3 cups all-purpose flour
  • 2 TBL pumpkin pie spice
  • 2 tsp baking soda
  • 1 1/4 tsp salt
  • 1 1/2 cup sugar
  • 1/2 cup dark brown sugar
  • 1 can (15 oz) pumpkin
  • 3 eggs
  • 1/2 cup vegetable oil
  • 4 TBL (1/2 stick) butter, melted
  • 1/2 cup milk
  • 1 cup roasted, chopped pecans

Instructions

  1. Preheat oven to 375°. Line a mini-muffin tin with cups.
  2. Combine the flour, spice, baking soda and salt into a small bowl.
  3. Combine the sugars, pumpkin, eggs, vegetable oil, butter and milk in a large bowl. Mix with a whisk until well combined.
  4. Add the flour mixture and stir until just moistened.
  5. Fold in the pecans.
  6. Fill muffin tins 3/4 full.
  7. Bake 12-14 minutes, or until a wooden toothpick inserted in the center of a muffin comes out clean.
  8. Cool on a wire rack for 10 minutes.
  9. Store muffins in an airtight container.
