I halved the original recipe to make 1 jar's worth.

Ingredients

  • 1/4 onion, thinly sliced
  • 1 medium cucumber
  • 1/2 cup water
  • 1/2 cup cider vinegar
  • 1/4 cup white wine vinegar
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1/2 teaspoon mustard seeds
  • 1/8 teaspoon ground turmeric
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon pickling spice
  • 2 whole garlic cloves, smashed

Directions

  1. Cut cucumber in half crosswise. Then, cut each half into 8 sections lengthwise.
  2. Combine the onion and cucumber slices in a clean wide-mouth pint jar.
  3. Combine the remaining ingredients, with the exception of the garlic, in a non-reactive saucepan. Bring to a boil and simmer for 4 full minutes to wake up the spice flavors.
  4. Add the garlic cloves to the jar. Slowly and gently pour the pickling liquid over the onion and cucumber slices, filling to the top of the jar.
  5. Cool to room temperature.
  6. Top off the pickles with any remaining pickling liquid and refrigerate.
