Brown Rice Porridge

Ingredients
- 4 cups unsweetened almond milk
- 4 cups of water
- 1 cup short-grain brown rice
- 1/4 cup sugar
- Pinch of salt
- 1 vanilla bean, split lengthwise
- 1/3 cup hazelnuts, toasted
Preparation
- In a large pot, add milk, water, rice, sugar and salt. Scrape vanilla bean and add it to the pot.
- Bring to a boil. Reduce heat and simmer, uncovered for 60-70 minutes or until mixture looks like porridge.
- Remove vanilla pod.
- Serve, topped with hazelnuts.
Using Pre-cooked Rice
For every 1 cup of cooked rice, use:
- 2 cups unsweetened almond milk
- 2 TBL sugar
- Pinch of salt
Add cooked rice, milk, sugar and salt into a large pot. Scrape a vanilla bean and add it to the pot.
Using a Rice Cooker
Use the original recipe, leaving out the water.
