Makes 60 dozen cups

Ingredients

For the Cookies

  • 1 1/4 cup peanut butter
  • 3/4 cup (1 1/2 stick) butter, softened
  • 2 cups powdered sugar
  • 3 cups graham cracker crumbs
  • 1/2 cups mini semi-sweet chocolate chips

For the Topping

  • 3/4 cup peanut butter
  • 1 1/2 cup mini semi-sweet chocolate chips

Instructions

  1. Grease mini muffin pan, or use a silicon pan.
  2. Beat peanut butter and butter in large bowl until creamy.
  3. Beat in 1 cup of powdered sugar.
  4. Mix in remaining powdered sugar, graham cracker crumbs and morsels by hand.
  5. Fill mini muffin pan, using 1 tablespoon of mixture per cup. Press down firmly.

To make the topping

  1. Melt the peanut butter and mini chocolate chips in microwave or over very low heat.
  2. Pour 1 teaspoon of topping over eat cookie.
  3. Refrigerate for at least 1 hour.
  4. Remove from muffin pan.
