Makes about 4 servings

Notes

Ingredients

  • 4 cups unsweetened almond milk
  • 4 cups of water
  • 1 cup short-grain brown rice
  • 1/4 cup sugar
  • Pinch of salt
  • 1 vanilla bean, split lengthwise
  • 1/3 cup hazelnuts, toasted

Preparation

  1. In a large pot, add milk, water, rice, sugar and salt. Scrape vanilla bean and add it to the pot.
  2. Bring to a boil. Reduce heat and simmer, uncovered for 60-70 minutes or until mixture looks like porridge.
  3. Remove vanilla pod.
  4. Serve, topped with hazelnuts.

Using Pre-cooked Rice

For every 1 cup of cooked rice, use:

  • 2 cups unsweetened almond milk
  • 2 TBL sugar
  • Pinch of salt

Add cooked rice, milk, sugar and salt into a large pot. Scrape a vanilla bean and add it to the pot.

Using a Rice Cooker

Use the original recipe, leaving out the water.
