Notes

Homemade marshmallows are amazingly delicious.

Ingredients

For the Marshmallows:

  • 3 packages unflavored gelatin
  • 1 cup ice cold water, divided
  • 1 1/2 cups sugar
  • 1 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • Confectioners sugar
  • Nonstick spray

Ideas for Coatings:

  • Toasted coconut
  • Ground pecans
  • Colored sugars
  • Cocoa powder
  • Sprinkles


Directions

  1. Spray a 13x9 inch pan with non-stick cooking spray.
  2. Coat pan lightly with powdered sugar.
  3. Sprinkle gelatin over 1/2 cup cold water in a medium bowl.
  4. Combine remaining 1/2 cup water, sugar, corn syrup and salt in a small saucepan.
  5. Heat sugar mixture over medium-high heat, covered, for 3-4 minutes.
  6. Uncover and continue cooking without stirring until mixture reaches 240°, about 7 minutes.
  7. Remove sugar mixture from heat.
  8. Beat gelatin mixture at low speed and slowly drizzle in sugar mixture.
  9. Increase mixer to high speed and beat until mixture is very thick, about 12 to 15 minutes.
  10. Add the vanilla and beat until just mixed.
  11. Spread mixture into prepared pan.
  12. Cover pan and cool at room temperature for at least 4 hours.
  13. Turn marshmallows out onto a cutting board.
  14. Cut marshmallows into 1 inch squares.
  15. Roll marshmallows in the coating of your choice.
