Makes 60 dozen cups
Ingredients
For the Cookies
- 1 1/4 cup peanut butter
- 3/4 cup (1 1/2 stick) butter, softened
- 2 cups powdered sugar
- 3 cups graham cracker crumbs
- 1/2 cups mini semi-sweet chocolate chips
For the Topping
- 3/4 cup peanut butter
- 1 1/2 cup mini semi-sweet chocolate chips
Instructions
- Grease mini muffin pan, or use a silicon pan.
- Beat peanut butter and butter in large bowl until creamy.
- Beat in 1 cup of powdered sugar.
- Mix in remaining powdered sugar, graham cracker crumbs and morsels by hand.
- Fill mini muffin pan, using 1 tablespoon of mixture per cup. Press down firmly.
To make the topping
- Melt the peanut butter and mini chocolate chips in microwave or over very low heat.
- Pour 1 teaspoon of topping over eat cookie.
- Refrigerate for at least 1 hour.
- Remove from muffin pan.
