Based on this Oatmeal Scotchies recipe.

Makes about 5 dozen cookies.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup (2 sticks) butter or margarine, melted and cooled
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11-oz. pkg.) Butterscotch Flavored Morsels

Instructions

  1. Preheat oven to 375°. Line baking sheets with parchment paper.
  2. Combine flour, baking soda, salt and cinnamon in a small bowl.
  3. Mix melted butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl.
  4. Gradually beat in flour mixture. Stir in oats and morsels.
  5. Let mixture sit at room temperature for 15 minutes.
  6. Measure out 1 tablespoon of dough, roll into a ball and drop onto baking sheet.
  7. Bake 9 to 11 minutes, until cookies are very slightly golden brown. Cookies will appear under cooked.
  8. Cool on baking sheet 5 minutes.
  9. Remove from baking sheet and cool completely.
